The weather had cooled down quite a bit last week and I was finally feeling like it was fall, but I had to remember it was homecoming weekend and it is ALWAYS foggy for Rim Homecoming. They also lost, not to say the team is bad but it's along the lines of tradition.
Saturday morning I slept in until 10:30 am. I have no idea how I did that and I was thankful I did because I ended up going to the Zac Brown band concert with my girls and that turned into a fiasco. Not in a bad way, but in the "Oh my god, I just realized how old I am and it's too old for this!" Let's just leave it with keys being lost, too much alcohol and disappearing girls. I pretty much fell asleep while waiting for part of our party to arrive in a grocery store parking lot at midnight. Call Cinderella, because apparently I turn into a pumpkin!
Sunday I headed out for another Banner Girl's party and I was able to finally complete my mantle. I love the fall banner I got. These ladies are the best! I feel like it has come together and looks festive.
Sunday also had me experimenting with a tomato soup recipe. I took the advice from other recipes and threw what I had into a crock pot for 8 hours on low. It was simple
1 can diced tomatoes (14.5 oz)
1 can diced tomatoes with Italian seasoning (14.5 oz)
1 can chicken stock (14.5oz)
2 cups 2% milk
2 garlic cloves finely chopped
1/2 stick butter
2 T Parmesan cheese
1 T dried sweet basil
Salt and Pepper to taste
Let it cook on low for 6-8 hours.
I ladled the chunky tomatoes into a blender and blended them before serving with a grilled cheese sandwich. Perfect comfort dinner for a Sunday night.
